Breakfast nirvana! Yummy, healthy, and easy...just right! My kids always want waffles for breakfast. But seriously, I already wake at 6am and we can hardly make it out the door on time for daycare drop off and getting to school (which is also my work).

These save my day!

A little time on Saturday. Cartoons on the tele, music on my radio and baking aromas set my weekend off right. Everyone is happy...and a whole lot healthier for eating these, rather than eating our next favorite...Fruity, circle shaped cereals!

We even squeak in some fruit by the ever evolving recipe below the waffle one :)

Whole Grain Waffles
compliments of Mr Breakfast.com

(10-12 waffles halves)

* 1 cup all-purpose flour
* 3/4 cup whole wheat pastry flour
* 1/4 cup quick or old-fashioned oats
* 1/4 cup flax seed meal
* 1/4 cup wheat germ
* 4 tsps baking powder
* 2 Tablespoon sugar
* 1/4 tsp salt
* 1/4 tsp salt 2 large eggs - beaten
* 1 and 3/4 cups milk
* 1/4 cup applesauce
* 1/4 cup vegetable or canola oil
* 1 tsp vanilla extract

In a large bowl, combine all dry ingredients (flours, oats, flax meal, wheat germ (didn't have.. added a bit more wheat flour), baking powder, sugar and salt.

In a separate bowl, mix together the eggs (I like to whip the egg whites and fold them in at the end.), milk, applesauce, oil and vanilla.

Add wet ingredients to dry ingredients and mix until smooth.

Cook waffles in a lightly-greased preheated waffle iron according to manufacturers instructions.

Gigi's Fruity Looty Topping
compliments of Great Grandma's fruit trees at the farm house
* 1-2 cups fruit (usually peaches, apples, berries or combination of said fruit)
* 1/2 cup juice (again...any juice)...or not depending on the juice in the fruit
* 1-2 tsps corn starch (make a slurry with the hot juice and slowly add while stirring)
*1-2 Tablespoons of sweetener of choice (today: Agave Nector but often refined sugar)

Confession...I don't measure anything so good luck. And I never do the same thing!
I usually splash in some vanilla because I an an addict.

Boil for a bit until beginning to thicken. Then smash with a potato ricer or back of a spoon. Serve over waffles.

This looks awesome. We are big on Saturday morning breakfasts too...but we usually do German Pancakes, because they're easy. Will have to try this one!

Both clever recipes. The pancakes sound especially delicious. Thanks for sharing this.
